There just seems a lot of space. I thought i really packed them in tight lol. It's a ball picked jalapeño recipe.

    They look fine, just pack them a little tighter next time but provided you followed a trusted recipe for pickling, they should be fine. Mine looked like that the first year and they were good for the 18 months it took me to go through them after a bumper crop.

    Edit: I was thinking of low acid canning recipes.

    Are those garlic cloves? I think there are some botulism concerns if they are. But I could be wrong. Might be wise to stick these in the fridge.

    What recipe did you follow?

    I think the main reason to pack tighter is so you aren’t just wasting space in jars.

    A bit of floating product is normal (the sliced pickles I made this year did the same thing, they shrink and shift during processing). One thing to note: When you’re packing jars and adding brine, keep an eye on the head space and make adjustments after the debubbling step and before you wipe the rims (I only mention because the middle jar looks like it has more headspace than the others).
