Made the spicy pork in broth receipe yall posted from Ball. Going to go ahead and get that book. These look great and I ended up drinking a pint of extra broth. It is addictive.
Fluid levels dropped a bit, but no evidence of siphoning in canner so I guess I will assume it was absorbed by yhe meat since the headspace was measured correctly before adding to the canner.

Can you sub chicken or turkey for the pork?
Love this one. If you add potatoes and green Chiles on the stove, and thicken it up you have a fantastic stew.
This is my favorite recipe, we call it pork choy because we only use it to make our pork choy soup (it’s just pork and a bunch of onion, bok choy, kale, etc) and absolute staple in the house. We buy a side of pork each spring, local meat makes it taste so good.
I cannot find the recipe in my “new and updated Ball complete bookd of home preserving” with all the copyrights being 2024. Interested in a different source please.
