Chicken Spiedini is an Italian dish that I just needed to cook in a Weber kettle. It is quick, easy and so tasty. This is a family favourite and I’m sure once you cook this chicken recipe, it will be yours as well.

Main Ingredients:
1 kg of chicken thighs (skinless and boneless) cubed into 3cm (1 ¼”) pieces
7 to 8 skewers
olive oil cooking spray
Marinade Ingredients:
1/2 cup extra-virgin olive oil
1/4 cup white wine, such as Pinot Grigio
2 tablespoons lemon juice
1 teaspoon lemon zest
2 cloves garlic, finely minced
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon dried oregano
1 teaspoons kosher salt
½ teaspoon freshly ground black pepper
Coating Ingredients:
2/3 cup Italian breadcrumbs
2/3 cup panko
1/2 cup grated Parmesan cheese
1/2 teaspoon garlic powder
1 teaspoons kosher salt
½ teaspoon freshly ground black pepper
Finishing Sauce Ingredients:
50 grams of unsalted butter
1 tablespoons lemon juice
2 cloves garlic, finely minced
2 teaspoons finely chopped fresh parsley
