Been inspired by this sub so I cooked up a cheap sirloin from the freezer. How did I do?

    Looks good! I have tried freezing the steaks and it’s just not the same. It has a softer, dryer texture and doesn’t have the same pop of flavor. Some say it causes fibers to contract? Bursting of cell walls when ice crystals form? It tastes more like roast beef than steak to me. Still decent but not like fresh.

    Nice overall sear and nice pink color for med/med rare temp with minimal gray bands. Good job! Hopefully it was tender considering not much marbling.

    I let it defrost, then seasoned, and put in oven at 220 for 40 mins. I was worried that was overcooked, but then I finished with a min on the cast iron and it was nearly perfect. For an $8 steak it was delicious, a small portion got expectedly chewy.
