Key West Spongers Pie, the original Key Lime Pie made with ol’ sour/old sour key lime sauce

    Growing up as a kid in Key West and the Florida Keys, I remember fried fish, mango, and key lime pie. They are three distinct memories. In other words, I have a flavor (and texture) profile hard-coded into my memory about these foods.

    I have ALWAYS remembered a special tasting key lime pie that was “peppery”. One of my friend’s, Nance Frank, this morning used the name “spongers pie” in context with some history about the Key West Oldest House and a famed and beloved local chef named Martha Hubbard who has a new cookbook out.

    While we were talking I was googling spongers pie and I found Hubbard’s recipe for Spongers Pie and everything just fell into place.

    My buddy Paul Menta’s [no-bake old sour Key Lime pie recipe](https://medium.com/@PRHORSE/old-sour-no-bake-key-lime-pie-bf33033d763f) is the one I used to make the pie and who makes the same kind of little key lime pies/spongers pies as desserts. These are the single serving on a large spoon or canning jar with graham cracker crumbs as “crust”.

    For me this is a lifetime journey. When I found all this this AM my entire body was covered with goose bumps. It was like I discovered a key to a memory of my childhood (I’m 59). Spongers pie is key lime pie made with Old Sour key lime sauce instead of regular key lime juice, it is a very distinct flavor profile: peppery, salty, (very) sweet, and GOOOOOD.
