Ingredients
For the Greek Meatballs:
• 1 lb ground beef (or lamb, or a mix)
• 1/4 cup breadcrumbs
• 1/4 cup grated onion
• 2 cloves garlic, minced
• 1 egg
• 2 tbsp fresh parsley, chopped
• 1 tbsp fresh mint, chopped (optional)
• 1 tsp dried oregano
• 1 tsp cumin
• Salt and pepper, to taste
• Olive oil for frying
For the Tzatziki Sauce:
• 1 cup Greek yogurt
• 1/2 cucumber, grated and drained
• 1 clove garlic, minced
• 1 tbsp olive oil
• 1 tbsp fresh lemon juice
• 1 tbsp fresh dill, chopped
• Salt and pepper, to taste
For the Lemon Butter Orzo:
• 1 cup orzo pasta
• 2 tbsp butter
• 1 tbsp olive oil
• Zest of 1 lemon
• Juice of 1/2 lemon
• 2 cups chicken or vegetable broth
• Salt and pepper, to taste
• Fresh parsley, chopped (for garnish)
Instructions
For the Greek Meatballs:
1. In a large bowl, mix the ground beef (or lamb), breadcrumbs, grated onion, minced garlic, egg, parsley, mint (if using), oregano, cumin, salt, and pepper.
2. Roll the mixture into small meatballs (about 1 inch in diameter).
3. Heat olive oil in a skillet over medium heat and fry the meatballs in batches until browned on all sides and cooked through (about 10-12 minutes). Drain on paper towels and set aside.
For the Tzatziki Sauce:
1. In a bowl, combine the grated and drained cucumber, Greek yogurt, minced garlic, olive oil, lemon juice, dill, salt, and pepper.
2. Mix well and refrigerate until ready to serve.
For the Lemon Butter Orzo:
1. Heat butter and olive oil in a large saucepan over medium heat.
2. Add the orzo and toast for 2-3 minutes until slightly golden.
3. Pour in the chicken broth and bring to a boil. Lower the heat and simmer until the orzo is cooked through and the liquid is absorbed (about 10-12 minutes).
4. Stir in the lemon zest and juice, and season with salt and pepper. Garnish with fresh parsley.
Serving:
1. Serve the meatballs on top of the lemon butter orzo with a generous dollop of tzatziki on the side.
2. Garnish with extra parsley, a sprinkle of lemon zest, and a drizzle of olive oil for an extra burst of flavor.
