In some cultures the pomegranate is also considered sacred; some scholars believe that it was a pomegranate and not an apple that grew in the garden of Eden.

If you want to prepare the salad ahead I would recommend chopping all the ingredients and mixing them in a bowl but do not add the dressing. Once you are ready to serve, add the dressing and let the salad mixture sit for 10 to 15 minutes before serving. This is a great salad to take to picnics since it won’t spoil like salads that contain dairy or mayonnaise.

4 – 6 Beefsteak tomatoes cored and diced or 24 oz of Cherry or Grape tomatoes
1 1/2 cup onion, diced
½ to 3/4 cup flat leaf parsley chopped
4 small to medium garlic, minced or to taste
1 cup natural walnuts, deshelled. Do not use salted walnuts. Break them into medium chucks.
1 Tbsp or 4 springs mint fresh, chopped

*Dressing*
¼ cup or 4 tablespoons EVOO extra virgin olive oil
1 tablespoon freshly squeezed lemon juiced
3 to 4 Tbsp pomegranate molasses
1 tsp Sea Salt or Kosher salt, or to taste
1/2 tsp ground black pepper
½ to 1 tsp Red Chili Flakes or Aleppo Chili powder or to taste
1 tsp cumin
Nutmeg, freshly grated on the top
