First time I grilled steaks a few weeks ago they didn’t get a good char. I had never grilled before and didn’t use enough coals.

I may have over corrected this time. I got the char I wanted but there were some bits that were too charred. It was still delicious but I wouldn’t consider it a success. I would consider it a success despite being a little over charred if it wasn’t also medium. I have to admit I haven’t eaten a medium steak since I was a kid. It was fine. The taste was great. The texture not as much.

It is so fun to learn though. I’ve really been enjoying my new hobby. Going to post pics of my first two and then each side of the last steak I made. It’ll be clear which is which 😂

    What did you do differently? First time I grilled steaks over charcoal, I didn’t get much of a sear and also overcooked them. Haven’t tried again yet.

    Steaks are hard…very easy to overcook. When I take mine off the grill I rest them 7-10 minutes. I usually pull them few degrees short and they will cook a bit more while resting under foil or another pan covering them. Also lay them on some garlic ghee and put a few chunks on top so it melts over them during the rest. So good.
