Was going to sousvide for 4 hrs and everything i was reading said 24hrs. Went with the 24hr@ 130° took it out dried it and covered in fridge for an hour. Maybe 2 minutes on each side on the grill. It was ……ok,not great. I prefer a pink center. Even though it's well done…it isn't dry so that's a bonus.

    If I were you I would check the temperature of the water next time. I do mine at 132 for 24 hours, sear a couple minutes each side on grill and it is still absolutely medium rare throughout. Something didn’t work correctly

    I do 135 for 5 hours normally. I’ve never heard of going that long on a tri tip. Either way, I agree with the other comments that color seems way higher than 130. Seems like something isn’t working correctly.

    That’s a lot of char. In addition to checking the water temp, I’d try a little less time on the grille and maybe more time in the fridge or an ice bath
