    Honestly you can throw that whole thing in there and smoke and braise it, then trim off the fat. Ads more flavor and you’ll get more meat

    I almost bought some of these at the store today. They were nearly $4/lb, seems kind of high. Probably need to look elsewhere.

    Looks great! When you popped open the pizza over to reveal the bone marrow was quite the flex. Also definitely could spot the 3 kids tacos lol well done

    What do you put in your braising liquid? I’ve only ever used a pretty standard beef broth, onion, and garlic braise when I’ve made cheeks. But then I freeze it afterward and use it as beef stock.

    For sure make barbacoa with the trimmings like Leroy & Lewis or Chuds. I’ve done it before and it’s fantastic!
