Took a year or two break from making loaves (was using my starter for pizza), recently bought equipment that makes it much more convenient and have had 3 bakes the last two weeks.
I follow perfect loafs best sourdough recipe except I use 20% whole wheat.
Whole wheat is Barton springs rogue de Bordeaux and KA bread for the rest.
