After more flour waste getting my starter going than I want to admit I’m so happy with my first loaf!

    500g Bread flour
    300g water
    150g of starter
    10g sea salt

    Mix until shaggy

    Complete 4 stretch and folds, working the bowl every 30 mins for 2 hours.

    Flour counter and do final stretch out.

    Complete fold and roll into ball.

    Place in proofing basket fold side down.

    Place in fridge for 12-18 hours. (I did 18)

    Preheat oven and place Dutch oven inside without dough at 425f for 30 mins

    Remove dough and score your pattern should you choose.

    I used parchment to prep for move to Dutch oven.

    Bake covered in Dutch oven for 20 mins.

    Then move cover and bake another 20 mins.

    Let rest on rack 20 mins before slicing.
