  1. Lamb Kofta
    1 lb ground lamb
    1 tb olive oil
    1 shallot, minced
    2 garlic cloves, minced
    1 fresno chili or jalapeño, minced
    1/4 c parsley,finely chopped
    2 tbs mint leaves, finely chopped
    2 tsp ground cumin
    1 1/2 tsp ground coriander
    1/4 tsp ground cinnamon
    1/2 tsp ground cardamom
    kosher salt and black pepper to taste

    Harissa Yogurt
    1 c greek yogurt
    2 garlic cloves
    1 tb lemon juice
    2 tb harissa paste
    1 1/2 tsp smoked paprika
    kosher salt, to taste 

    Cucumber Tomato Salad
    2 Persian cucumbers, sliced
    1 large heirloom tomato, diced
    3/4 c radicchio, thinly sliced
    1 fresno chili, sliced
    3 radishes, sliced
    1/4 c parsley leaves
    1/4 c cilantro leaves
    2 tb mint leaves
    2 tb fresh lemon juice
    1 tb olive oil
    1 tsp za’atar spice mix
    flaky salt
