Recipes from the heart, episode 16: Basic Bolognese sauce

Mince
1/4 cup olive oil
1 brown onion, finely chopped
1 garlic clove, minced
1 cinnamon quill3 bay leaves
3 cloves, whole
6 all spice berries
500g beef mince
2 tablespoons tomato paste2 teaspoons sugar
1 can crushed tomatoes (400 g) or 2-3 large tomatoes, gratedSalt & Pepper
1-1.5 cups of water

Mince
1. Place a large pot over medium to high heat. Add olive oil and onion and sauté for 3-4 mins, before adding the garlic.
2. Next, add all the spices, followed by the mince, breaking it up with a wooden spoon until it browns and all the juices have absorbed. It’s important that all the natural juices released are cooked out before proceeding to the next step.
3. Add the tomato paste and sauté for 2 mins to release the flavour.
4. Add the tomatoes, sugar, salt, pepper and water.
5. Bring to the boil then turn the heat down to simmer for 1 hour, until the sauce reduces.
6. When ready, remove from heat, discard the spices and set aside until needed.
