Recipe for 2 loafs:
800gr bread flour, 75% hydration, 25% levain, 2% salt.
1 hour autolyse, kneaded for 10 minutes aprox, BF for about 6 hours, did 1 lamination un the beginning and then 2 sets of stretch and fold.
Cold ferment overnight in the fridge, baked the next day in a dutch oven. 20 min covered 20 minutes without the lid.
I still need to work on the cut to make the ears pop more.
