How to make Italian gnocchi at home? Pumpkin gnocchi the easiest and tastiest way

Pumpkin dishes are a great classic in autumn and among these, gnocchi are my favorite. When mixed with gorgonzola cream, they become irresistible! For a unique touch
Ingredients for 5 people ►
Pumpkin 600 gr ►
Boiled potatoes 200 gr ►
00 flour 300 gr ►
Eggs 1 ►
fine salt 1 pinch ►
Whole Milk 1 tablespoon ►
Gorgonzola Dolce D.O.P 180 gr ►
cooking cream 200 ml ►
Grated Parmesan 40 gr ►
shelled walnuts 75 gr ►
1) Clean and cut the pumpkin into pieces, cook it in the oven for 30 minutes at 180 degrees in static mode. Boil the potatoes for 30 minutes in boiling water
2) Once cooked, let them cool, then work the pumpkin with a fork and pour it onto a work surface. Add the boiled potatoes passed through a potato masher and mix the ingredients.
3) Add an egg, grated parmesan, a pinch of salt and mix with the prongs of a fork. Gradually pour in the flour and knead. The mixture will be soft. Before working it with the rolling pin, sprinkle a little flour on the surface.
4) Form a thick rectangle, cut many strips and then some small pieces.
5) In a pan, heat the cream with the gorgonzola, add a spoonful of milk and the salt. 6) Cook the gnocchi, drain them and mix them in the gorgonzola cream. Once plated, season with walnut kernels and with melted honey if you like
