I feel like I'm accidentally overfilling my cookies there's always area to add icing until I use my scribe but after I use my scribe it seems to be a little much and it sometime runs over the piping edge line how do I know when to stop adding icing am I making sense? I've also had some color bleeding with my food coloring is there anything I can do about that?

The overflow could just be your flood icing being too thin. You may also need a thicker flood line to hold the icing in. Color bleed will also happen if your icing is too thin. Thin icing =more water added=more color bleed. You could also add white food coloring to icing before you add colors. I always do that and rarely if ever have bleed. Humid climates could also contribute the moisture in the air can cause bleed. During particularly humid/wet months (I live in Boston) I run an air purifier (to make sure no dust particles dry into my cookies) and I dry them in front of a fan. Speeding up drying time reduces the bleed.

The 2 strands of string lights cookie at 7 o’clock is SO cute! I love the composition! It’s unique and simple and beautiful!! I would love a whole tray of those.
