I wish I could eat turkey/chicken sausage, but it doesn’t work for me. I do like pork sausage though, and I find a little goes a long way. I’m all about making healthier substitutions, I eat A LOT of chicken breast, but sometimes i just want something rich (while still staying within my limit). I find this doesn’t need any sauces. The sausage link alone is 260 calories and I find it incredibly satisfying.
I made 5 pork sausage links, roasted over a bed of 2 red onion, 2 red peppers, and 16 oz cauliflower. I intended to use Brussels sprouts and baby potatoes but they didn’t look good. I’ll serve over rice (160 cals) and/or shredded coleslaw.
