    Serves 2

    Ingredients:

    – 1.5 lb yellow potatoes diced in small chunks
    – 1/2 white onion diced
    – 1/2 tbsp spicewalla seafood seasoning
    – Minced dill (could also do chives)
    – Capers (pickled kind)
    – Mustard and ketchup
    – Salt to taste
    – Avocado oil or other high heat oil of choice

    Directions:

    1. Steam potatoes in salted water until fork tender. Around 8 min. Drain and set aside.
    2. While potatoes are cooking, heat cast iron skillet over medium heat. Adding a little oil. Add onions, cooking until soft and slightly golden. 5ish min. Season with salt. Set aside.
    3. Add more oil as needed, to coat bottom of pan. Turning the heat up a little above medium. I do mine on the 6 dial. Add your potatoes and season with seafood seasoning and salt. Stir to combine. Then press down into skillet with your spatula with a little pressure. Leave untouched for 5 min. Flip and then again, press down with some pressure and let sit untouched for 5 min. You should see a nice crust, especially on the 2nd side.
    4. At this point add additional seafood seasoning and salt to taste. Turn heat off, and stir back in cooked onions.
    5. Load potatoes up on you plate. Add in dill, capers, drizzle of ketchup and mustard. Enjoy!

    Alternatively I like ketchup and hot sauce, instead of mustard.
