Idk why my San marzano plant seized to put out a bunch of these right before our first frost but after a few frosty nights the plant is dead so I figured I’d salvage them. What to do now?

EDIT: I have the green beef steaks for fried green tomatos 😋😋
CitrusBelt
Pickled green tomatoes are excellent (if you like pickled stuff, that is) and one of the easiest things to get good results with on boiling-water-bath canning, with the exception of peppers. Pretty sure there’s a Ball recipe available online for green tomatoes; if not, you could always adapt a generic one. They work well when done as fridge pickles/quick pickles too, if you have the space.

I put mine in a brown paper bag with an apple and they all changed from completely green to red.
