After seeing steak pics pop up on my feed for months and months – decided to buy all the necessary stuff to reverse sear (minus a cast iron)… after reading everyone’s reverse sear instructions figured I’d try with that.

Pulled it around 120° in the core – let it rest 10 minutes then seared it in a metal pan with a splash of vegetable oil before putting the steak in. I think I could have seared it a little more but overall super happy with my first attempt.

    This can’t be your first steak… you’re supposed to have atrocious monstrosities of meat several times while going up and down on cook times and temps before you get something that looks like this.

    Looks great. If you chill it for 3-5 minutes in the freezer and then go into a hotter pan you’ll get same internal results with a better crust. The slight chill let’s the outside get crispy but slows the heat penetrating the steak to avoid any bands. But overall looks really nice color and well rendered fat
