I love all the barramundi so I already had high hopes for this. Not one who usually has the turmeric spice in food so I was intrigued.
The barramundi was just seasoned with cumin and turmeric, and that alone gave it a great flavor. I did the “salsa” a bit different. I sauté mine instead of just having it raw. I liked how it worked out. (So sour cream for me)
I LOVED the rice!! I thought that mushroom concentrate gave it a great flavor boost! I’d definitely make this rice again with other meals.
I’m really looking forward to eating my leftovers for lunch. I thought the flavors all around were great! It was very filling!
The only thing I’d change is baking the barramundi (or could air fry if you want the crisp) I’m just tired of always “frying” and cleaning up that mess.
