➡️This is the recipe that our daughter-in-law shared with us of Southern Mac and Cheese
Ingredients
Box of Ridged jumbo elbow pasta, cavatapi, or penne
16 oz sharp cheddar cheese
1 Tbs butter
1 Tbs flour
2-3 cups of whole milk
1 tsp black pepper
1/2 tsp mustard powder
1/2 tsp onion powder
1/2 tsp paprika
1/4 tsp of garlic powder
1/4 tsp of cayenne
Cheezits
1. Preheat oven to 375°
Boil pasta in well salted water. “Salty as the sea” as the Italians say lol
2. While boiling make a roux in a medium saucepan by melting around a Tbs of butter on medium heat. Stir in flour constantly with a whisk until barely browned/doesn’t smell like raw flour anymore, around a minute or two.
3. Slowly add in milk by a splash at a time. It will almost look like a dough or paste but keep whisking and stirring in more milk in small splashes so clumps don’t form.
4. Keep heating over a medium-low heat for around 5 minutes or so, stirring occasionally. Try not to let it come to a boil, just letting it thicken. If it doesn’t boil take it off the heat to let it cool down before adding cheese or it could curdle.
5. Add spices and stir then add at least half of the cheese (8oz) by the handful stirring as you go to incorporate into the cheese sauce. Taste as you go to make sure it’s to your liking. I estimated spices but measure with your heart, you can always add more.
6. Combine pasta and cheese sauce, pour half into a casserole dish and layer shredded cheese, then add the rest. Top with what cheese you have left and crushed up Cheezits.
7. Bake around 20 minutes, check to see the top is melty and starting to brown.
