    I’m a baker for Safeway, I make bread but 90 pounds at a time. I could figure out the measurements for a single loaf with some trial and error but I don’t bake for myself at home so I haven’t.

    Props to you however, that looks like ideal bread. Without being able to taste it or feel the consistency of it, I’d say you did a very good job and should be proud of yourself

    You definitely need your own sourdough starter! I made mine in May and the culture is still alive. I made a white wheat sourdough starter and a dark rye starter out of my culture, I’m baking at least twice a week with them. It’s super fun and satisfying, they’re almost like a pet you need to take care of. I’m putting sourdough in everything I bake, bread, buns, cookies, pancakes, cakes….it gives everything that certain depth of flavor and makes it more digestible
