Immerse yourself in the world of Eastern fairy tales with Baghrir! These airy, porous pancakes are crafted to deliver pure enjoyment, taking you to the enchanting atmosphere of 1001 Nights, while the aroma of the apple and cinnamon sauce fills the soul with warmth and sweetness.
Ingredients:
– Semolina “MELNITSA” — 200 g
– Flour “BELOTSERKOVSKAYA” — 100 g
– Dry yeast “YAMUNA” — 1 tsp
– Sugar — 1 tbsp
– Salt — 1/2 tsp
– Warm water — 500 ml
– Baking powder — 1 tsp
– Vinegar (9%) — 1 tsp
For the sauce:
• 4 apples, cored and diced
• 2 tsp ground cinnamon
• 1 tsp ground ginger
• A pinch of grated nutmeg
• Salt — a pinch
• 80 g butter “MY FAMILY”
• 4 tbsp brown sugar
• 100 ml honey “STEINHAUER”
• Crushed pistachios and sour cream for serving, if desired
Instructions:
1. In a blender, mix the semolina, flour, sugar, yeast, and salt. Add the warm water and blend until smooth. If you don’t have a blender, use a bowl and an electric mixer.
2. Add the baking powder and blend for a few more seconds. Let the batter rest for 30 minutes, then blend again. For bubbles, add one teaspoon of baking soda.
3. Heat a non-stick pan over medium heat. Pour a small amount of batter into the pan and leave it until the surface of the pancake dries and is covered with bubbles. Baghrir are cooked only on one side.
4. Do not stack the hot pancakes on top of each other, as they might stick. If you need to stack them, place paper napkins between them.
🍏 Apple-Cinnamon Sauce 🍏
1. Melt the butter over medium heat, stirring until it turns golden-brown (about 3–5 minutes).
2. Add the honey and sugar, stirring until the sugar is fully dissolved. Then add the apples and cook until they are soft and the syrup thickens (about 8–10 minutes).
3. Serve the warm apples over the Baghrir, topped with pistachios and a dollop of sour cream if desired.
