Nah, sodium citrate is fucking awesome.
You need about 2.0 to 3.0% sodium citrate relative to the weight of cheese and liquid.
My recipe:
* 500 grams of cheese. I usually use whatever random cheese I have in my fridge, but cheddar, queso quesadilla are good. * 12 grams of sodium citrate * About a cup of milk or beer (volume depending on desired texture and the moisture content of the cheese) * Tablespoon of onion powder * Black pepper to taste * Hot sauce to taste
Add everything but cheese to a sauce pan on medium heat. Add cheese in gradually while stirring vigorously
Even if your cheese is preshredded with anti-caking agents, it should end up silky smooth.
EDIT 500g is more than a pound in freedom units. I’m feeding a small cheese-obsessed family. Scale units accordingly
