Some adjustments:
I place a pan on the shelf below my cast iron Dutch oven.
I add a couple of ice cubes before closing the lid.
I open it 20 mins in. Bake for 20-25 mins more. Then alone on rack for 5-10 mins.
Also while this recipe calls for AP flour I feed my starter bread flour.
