Summer rolls are an underrated easy vegan lunch. I make them all the time. It takes 5 minutes.

Soak your rice paper wrappers in cool water, not hot, just until they're malleable. I don't know why bloggers always specify hot when it takes perhaps 30 seconds to soak them cold and your spring rolls will turn out better.

Roll them on a damp cloth, and they won't stick.

Put in whatever you want to be visible in the roll in first. Then the rest, then roll like a burrito. There's a trick you can use where you put all your filling except the tofu in a lettuce leaf for easy rolling if you don't believe in yourself.

Filling: I do tofu, cilantro, shredded carrot, avocado, and vermicelli noodles usually. Just put whatever (relatively dry) ingredients you like in. The more herbs the better; some people do basil and mint.

You can whisk up various dipping sauces depending on what you usually have around, but I just buy some sweet chili sauce.
