Decided I would do some canning for holiday gifts this year and started today with the Steak and Burger Sauce recipe from Ball’s Complete Book of Home Preserving book. The recipe says I should have made 5 8-oz jars, and I ended up with 8 and a half (did not process that one, went into the fridge). Anyone else have this experience where it makes way more? Not complaining at all, just want to know if I should anticipate this.

It happens. I make a lot of jams and always prep extra jars.
And this is why so many of my books have scribbles in the margins! (Actual yield = xx)
you should expect this it’s normal especially with Ball/ Bernadine which are the same company.
The reason is often is the difference in units. The conversion of between imperial and metric units is a big one.
Why?
The jar sizes are slightly different so the not so much as to affect canning but enough that the yield changes.
A quart for example is 946 ml which is 54 ml short of a liter (1000 ml)
The use of cups is also problematic as they’re 10ml off.
