Beautiful Dover Sole. Perfectly trimmed by removing skin, removing roe, head, tail for presentation. Baked with a oil and butter sauce with capers and finely chopped onion. Tastes excellent and texture is on softer side. Fish contains lots of bones. Would not recommend doing at home and rather order at a restaurant, IMO.

    Interesting. So after filleting there’s still lots of bones in there? Doesn’t look like there would be but I’ve never had this fish before

    I can’t be the only one surprised that it was skinned with the head still on. Is this a thing? The fin was even entact.
