Here’s a traditional Kerala-style sardine fry recipe, known locally as Mathi Varuthathu. This recipe combines sardines with a blend of spices that captures the signature flavors of Kerala.
Ingredients:
• 500g fresh sardines, cleaned and gutted
• 1 tbsp chili powder (adjust for spice preference)
• 1/2 tbsp turmeric powder
• 1/2 tbsp black pepper powder
• 1/2 tbsp fennel powder
• 1/2 tbsp coriander powder
• 1 tbsp ginger-garlic paste
• 1/2 tsp vinegar or lemon juice
• Salt, to taste
• Fresh curry leaves
• Coconut oil, for frying
Instructions:
1. Prepare the Marinade:
• In a bowl, mix chili powder, turmeric powder, black pepper powder, fennel powder, coriander powder, ginger-garlic paste, vinegar (or lemon juice), and salt.
• Add a small amount of water if needed to create a thick, paste-like marinade.
2. Marinate the Sardines:
• Rub the marinade evenly over the sardines, making sure to coat the insides as well.
• Let the fish marinate for at least 30 minutes (or up to a few hours in the fridge for a deeper flavor).
3. Fry the Sardines:
• Heat coconut oil in a large pan over medium heat.
• Add fresh curry leaves to the oil to infuse the oil with their aroma.
• Place the marinated sardines in the pan, frying them for about 3–5 minutes on each side until they’re crispy and golden brown.
• Avoid overcrowding; fry in batches if necessary.
4. Serve:
• Once done, drain the sardines on a paper towel.
• Serve hot with lemon wedges and garnish with extra curry leaves.
Tips:
• Coconut oil enhances the authentic Kerala taste, but you can use other oils if preferred.
• Serve with steamed rice, chapati, or as a side dish with Kerala-style meals.
Enjoy your Kerala-style sardine fry!
