In this recipe, we will be using breadcrumbs and chicken meat to add an extra crunch and protein boost. The sauce is made with raw quail eggs and parmesan cheese, giving it a rich and creamy texture that will elevate the flavors of the dish.
Ingredients:
For the salad:
– 200 g of chicken fillet
– 100 g of fresh lettuce (for example, Romano or Iceberg)
– 50-100 g of crackers (you can buy ready-made or cook yourself)
– 1-2 tomatoes (chopped)
– 2-3 boiled eggs (chopped)
– Olive oil (for frying)
– Salt and pepper to taste
For the sauce:
– 4-6 raw quail eggs
– 50 g of Parmesan cheese (grated)
– 1 tsp Dijon mustard
– 2-3 pickles (finely chopped)
– 2-3 tablespoons of olive oil
– Juice of half a lemon
– Salt and pepper to taste
Preparation:
1. Preparation of chicken fillet: wash the chicken fillet, dry it and cut into pieces. Add salt and pepper to taste. Fry the fillets in a preheated frying pan with olive oil until golden brown and fully cooked (about 5-7 minutes on each side). Cool the finished meat and cut into cubes.
2. Sauce preparation: in a blender or bowl, whisk the raw quail eggs until smooth. Add grated Parmesan, Dijon mustard, finely chopped pickles, olive oil, lemon juice, salt and pepper. Beat the sauce until it has a smooth and homogeneous consistency. Try and adjust the taste according to your desire.
3. Assembling the salad: in a large bowl, tear the lettuce leaves into large pieces. Add the fried chicken fillet, chopped tomatoes and boiled eggs. Pour over the resulting sauce and mix gently. At the end, add the crackers and mix gently so as not to break them.
4. Serving: Serve the salad immediately while the crackers remain crisp. You can decorate with additional grated Parmesan on top and, if desired, add freshly ground black pepper.
