    -β€”β€” For the dough: 200 g Flour 0000 100 grams of butter 4 tablespoons of sugar 1 egg 1 yolk Zest of 1/2 lemon (very small and without the white)

    β€”β€”β€” For the filling: 1 Lemon (juice and zest without the white) 100 grams of sugar 200ml of water 1 tablespoon of butter 2 tablespoons of cornstarch 2 egg yolks

    β€”β€” Swiss meringue: 3 egg whites (left over from the recipe) 9 tablespoons of sugar (if you want a lot of meringue, add 3 tablespoons of sugar for each extra egg white)

    Is this what southern Americans would call a lemon chess pie, or is it different? I don’t think lemon chess pie has meringue on it, but I’m curious if the lemon filling part is similar to lemon chess pie.
