The “oh no I have a bunch of food that’s about to go off” soup

    This soup was a lot of effort, probably too much for a crockpot recipe. But I needed to use a bunch of stuff that was reaching its use by date.

    * Cube and salt about 1/2 pound of pork shoulder and sear off in dutch oven then transfer to crockpot
    * dice 1/2 yellow onion and 2-3 handfuls of baby carrots and cook in the fat from the pork
    * push veg to side and dump 6 oz tomato paste and 4 cloves minced garlic into center
    * cook for a bit then deglaze with about 6 oz wine and reduce for 15 min
    * transfer to crockpot
    * wipe out dutch oven
    * sear off 2 links of sliced linguica (then transfer to crockpot)
    * use oil from linguica to make a quick roux. slowly add chicken stock to that and reduce for 10 min then add to crockpot
    * 1/4 pound of potatoes cubed
    * can of rotel
    * pepper, garlic, salt, onion powder, mexican oregano, cumin, cayenne, paprika, msg, and a few dashes of Worcester sauce.
    * 3 bay leaves (cuz I’m not driving)
    * top off crockpot with chicken stock
    * cook on low for 6 hours
    * with 2 hours left add 2 cups of fresh green beans (cut to bite size pieces)
    * with 30 min left add a can of hominy and a diced bell pepper
    * serve over yesterday’s rice.
    * eat

    I planned on making a nice soup today but got gifted a bunch of booze and promptly forgot to start it.

    I’ve done this, broth wise, and I won’t go back! Freeze everything you would normally throw away when making other meals, keep in a bag in the freezer. Onion ends, carrot ends, all veggie “toss pieces”, even crab shells, meat fat/tough grissle. Chuck it all in a pot, and boil it! Its super fun, and creates a great broth.
