I’ve never thought about doing this. Interesting.

What’s the process to make this?

Been meaning to try these. Now seems like a good time.

They use these in Chinese Zhongzi – Sticky rice wrapped in Bamboo leaves with braised pork, Chinese sausage, shiitake mushrooms and other fillings, including the salted egg yolk. It’s the Chinese version of a Mexican tamale.

This is pretty common in Chinese cuisine, I’m pretty fond of salted duck egg yolk myself. Definitely underrated—and you’re right, it actually is kind of cheese-like in a way, I never thought about it like that.

Someone in the comments mentioned eating the yolks with grits—salt cured egg is a common side dish to accompany congee, so it should hypothetically work with grits and other porridges too.

“So what you’re gonna want to do is suspend the yolk in Limbo so that you can…? Yes! That’s right. We’re going to freeze it in Space Time! Great job everyone.”

I’ve never tried this, but I can taste this. Does that make sense?

I’m not sure how I feel about this. It looks like dried apricots to me.

I worked at a pizza place that used this as a topping. We would finely grate if on this one pizza after pulling it out of the oven. (I think it had a ricotta base, and asparagus and some white cheese)

Try it on buttered toast with a good jam.
