Ingredients,
1 or 2 Pounds of Carrots
1 1/2 Cups of Apple Juice (Use 2 1/2 cups if making a bigger batch)
1/2 Cup of Light Brown Sugar
3 Tbsp of Butter
2 Tbsp of Honey
1 Tsp of Vanilla Extract
Directions
1. Wash and peel the carrots and cut into uniformed pieces.
2. Add carrots and apple juice to a pot or pan. Cover and let cook until carrots are slightly tender. You could cook until completely tender and then remove from pan also.
3. Add brown sugar, butter, and honey to the pan. Let cook uncovered until liquid reduces to a glaze and carrots are tender. If you removed the carrots, add them back to the pan once the glaze has reduced and thickened.
4. Serve while hot as a side. Enjoy!
