Was inspired after finishing season 3 to try my hand at lamb. Slow smoked for a couple hours.

    Overdone, but lamb rack in the smoker is always a precision jump. That’s medium well; not ruined by any stretch and probably still very tasty, but it’s clearly not medium rare.

    For what it’s worth, I think leg of lamb is a much better choice for the smoker and I have yet to get disappointing results. Super forgiving, always picks up just the right amount of smoke.
