I love making Christmas desserts, and this is my first video of the season! I made a cute, ornament-shaped mousse cake with raspberry and milk chocolate flavors, topped with a pistachio sable Breton cookie at the bottom. What could be more festive, right? Haha. Raspberry milk chocolate mousse
Milk chocolate 90g (I used Valrhona Jivara)
Raspberry puree 60g
Heavy cream 35% 20g
Heavy cream 35%135g (Whipped)
1 Gelatin sheet 2g

*It was around 10g per one half sphere mousse (3.8cm diameter half sphere)

Pistachio sable breton
Butter 135g
Sugar 115g
3 Egg yolks 60g
Pinch of salt
All-purpose flour 195g
Baking powder 10g
Pistachio paste 15g
Bake at 350F for about 12 minutes (I used a convection oven. Baking time can be different depends on your oven and the size of your cookies)

Mirror glaze
Water 80g
Sugar 80g
Sweetened Condensed Milk 100g
White Chocolate 200g
Gelatin Sheets 4 sheets (8g)
Red & Green Coloring As needed
