Pickled Butternut Squash, Pickled Carrot, Pickled and Fresh Green Apple. Umami crumble (theres a lot of shit in the crumble), Red Pepper Coulis, and garnishing herbs from my plants 🪴
This is the first try at making a dish ever, taste wise, it needed acid, the sauce overpowered the dish a bit, and it kinda has the same texture all throughout cause your eating 3 different small dices. so I’m thinking of changing the sizes and therefore textures of the different ingredients in the salad and maybe removing the diced apple for another more sturdy crunchy vegetable or fruit, aside from that i don’t have anymore criticism that i personally see, so an outside perspective would be great to see what i cant. THANKS 🙏

You could replace the apple with zucchini
V3 is gorgeous and hilarious on that plate. I suspect that the dish would be more satisfying on the texture end if the apple and squash weren’t both diced so small.
Looks great! I would do a gazpacho or salmorejo instead of a coulis tho

The plain plate/bowl works better for this, but the last pictures work well, too. Squashes aren’t my thing, pickled or not, but I could see all of this going well.

also, that looks beautiful and really fun, but I’m confused as to how you’ve never made a dish before and somehow came up with this? like, you mean you’re a cook, but you’ve never invented your own dish until now?
