First time I've ever made ice cream! My mum bought 1kg (~2.2lbs) of creme fraiche by accident (That's not cream cheese!!!). So I looked up what you can make with creme fraiche, and it's basically ice cream or a weird quiche…

So I made lemony ice cream. I made three tubs: I love my lemony things to be REALLY lemony, but had no idea how acidic lemon juice would affect the freezing. So I experiment with three methods. All worked well! All taste lovely!

Anyway, this post is about the topping. I skinned three lemons with a sharp knife, and sliced (julienned?) it finely. Then I boiled it for about 4 minutes to remove the bitterness. I then drained it and boiled again in sugary water with chilli flakes, and jarred it in lemon juice, sugar, and water cooked with chillis.

It's incredible! It adds texture to the ice cream, it's slightly savoury but only a tad, so it perfectly complements the sweetness. And as I said, the ice cream is perfect.

The ice cream was all done without a machine, and the lemon skin was done without a recipe. I'm proud!
