Just did my first smoke on the Performer with a boneless turkey breast. Overall impressed with how even it kept the temp through the cook.

    With chicken, although temperature is important don’t use a thermometer to dictate when you take the item off the grill. For example, I got a thermometer and stuck it in some wings, soon as the wings hit temp I took them off, they were bad, learnt my lesson, the temp is a minimum guide for safety not when you should take it off.

    Just a tip for whoever reads it lol
