    Looks perfect to me I’ve never made a steak that beautiful ( I also don’t sous vide) would totally enjoy this steak more than most restaurants steaks.

    From top to bottom let’s go over what you did:

    1) you ordered from wild fork so I already know the steaks over there have great marbling. I even get exotic meat there and that’s top notch so good job with that.

    2) you cooked it via sous vide. Probably 2-3hrs @137° which led to that color and texture.

    3) you dried that mf off after the bath and let it rest for a second before you put it into a smoking hot cast iron for a minute each side to get that crust.

    4) put that SOB on a plate (without utensils, bc that’s what I’d do), ran to your room and scarfed that mf down.

    100% would demolish this the same way
