    In my family, there is a 30-year running joke with one of my cousins because she did exactly that replaced eggs with oil and got exactly what you did a deep-fried charcoal “brownie” brick. Thanks for the funny memory and sorry about your brownies.

    You can replace butter with oil, I don’t think you’re supposed to replace the eggs lol. I don’t mean this in a condescending way, but just use common sense. An egg consists of 74% water, 12% protein, 10% fat and 0.5% carbs. If you actually need to replace the eggs because you have none, you could replace them with water, fat and some sort of protein if possible.

    Example: If you need 4 eggs (each egg ~50 grams = 200 grams in total) you could replace them with 140g water, 20 g oil, vegetable shortening or butter, 20 protein powder and 1 gram of soy lecithin
