80% Merlot 12% Cabernet Franc 8% Cabernet Sauvignon
Owned by the Fayat family, La Dominique sits right next to Cheval Blanc, but the composition is different due to the soil being more clay based. 14 months in 60% new and 40% used oak. From 2017 onwards the estate has started using polymer and glass amphoras to age part of the wine to maintain freshness. I visited the estate this summer and its beautiful!

Color: Deep dark red with garnet rim.
Nose: Very complex with dark fruits and spice. Lingonberry, ripe cassis, blackberry, blueberry , cedar. At this point in its development there is light cinnamon bread notes such as cinnamon, clove and nutmeg. Just a hint of funk / garrigue in the background.
Taste: Wine is open, medium+ / full bodied, polished and smooth. Tannins are still quite present, but showing first signs of being resolved. The dark fruited taste follows the nose. Very complex and long. Still developing as it gets air in the glass.
Long life ahead of this wine, but its showing beautifully open right now.
Rest of the wine will tomorrow be paired with duck breast, carrot puree , roasted garlic chips and blackberry & raspberry reduction.
