    Forgot the Recipe!

    90g Starter
    14g Salt
    375g Flour
    235g Water

    Left on counter after stretch and folds, took a little longer than usual to proof, around 16 hours roughly. Then in the fridge for 12.

    Baked at 475 covered in Dutch oven for 25 min and uncovered at 425 for 6-10 until the desired color.
