Ingredients:
Spaghetti (use lentil or chickpea for higher protein)
Cherry tomatoes 🍅
Spinach 🥬
Garlic 🧄
Onion 🧅Broccoli 🥦 (or whatever other greens you have lying around)
Salt, pepperchili flakes 🌶️
Olive oil
Cheese of choice ( I used violife greek)
Liquid: I used chopped tomato but you can use vegetable broth or another liquid of your choice.
Method:Chop onions and garlic and tomato in half. Toss everything in a pan, cook until the pasta’s perfectly al dente, and top with cheese.
