How to make foccacia bread

Ingredients:
2 cups warms water
1 tsp honey
2 tsp active dry yeast
4 cups bread flour or ap flour
1 tsp salt
2 tbsp olive oil
Topping (I added garlic, rosemary, salt and parmesan). Add whatever you have available.

Combine water, yeast, and honey. Let sit 15 minutes. Then add salt, olive oil, and flour and combine into a ball shape. This is a sticky batter you can add olive oil to your fingertips for easy mixing.
Let rise 1-2 hours room temperature or 8-48 hours in the fridge.
Once it doubles in size, punch the air out of the dough, do a couple folds, lay on a greased pan and do a second rise. 2-4 hours room temp. Drizzle some more olive oil on top. The key is to keep the dough moist so it doesnt dry out. Poke your fingers into the dough to create the foccacia look. Top with salt and water ingredients you desire. Bake at 425 for 30-40 minutes until perfectly golden and cooked.

Dipping sauce:
Olive oil
Garlic
Italian seasoning
Fresh herbs
Sundried tomato
Parmesan
Balsamic vinegar
Salt and pepper
