Recipe 850g bread flour
200g whole wheat
685g water
Mix and let rest for 1 hour
Add 250g starter
35g salt
Rest for 30 mins > stretch and fold
30 min rest > laminate
Let rise in oven with light on
3 sets of coil folds every 45 mins
Then 1 hour to finish rising
Laminate and add cinnamon brown sugar
Shape
Rise in oven for 30 mins
Into fridge overnight
Bake at 450 for 37 mins
