This quick and easy breakfast burrito is a regular in my house. Only 445 calories and 52g of protein!

RECIPE:
Ingredients:
1 Large Carb Counter Tortilla
40g Diced Frozen Potatoes
5oz / 142g Egg Beaters
1 Turkey Sausage Patty
2.5oz / 71g Cubed Ham
Garlic Salt (to taste)
Black Pepper (to taste)
Sriracha (to taste)
Frank’s Red Hot Sauce (to taste)
41.5g Fat Free Cheddar
Cooking Spray

Spray diced potatoes with cooking spray and sprinkle with garlic salt. Put them in an air fryer at 370° F / 190° C for 15 minutes.

While the potatoes cook, thaw the sausage patty in the microwave until soft enough to cut, then dice the sausage into small cubes.

In a bowl combine Egg beaters, sausage, ham, and 1/3 of the shredded cheddar. Add garlic salt, black pepper and Sriracha to taste, then mix everything together.

Cook the egg mixture in a skillet on medium, mixing occasionally until the eggs are cooked to your liking.

Sprinkle half of the remaining cheddar on the center of your tortilla. When the potatoes have finished cooking, add them to the tortilla and sprinkle with hot sauce. Add the cooked egg and meat mixture. Sprinkle on more hot sauce and the remaining cheddar, then wrap your burrito.

To Grill: wash the skillet and place back on stove. Place the tortilla on the hot skillet for one to two minutes, then flip to grill the other side. When both sides are a golden brown, plate and enjoy!

  1. This one I know works because i make a similar one usually once a week. My wife likes eggs so we slice up ham and orange and red peppers then scramble it with eggs and cheese. I use salsa, she uses taco bell sauce. I haven't tried making it a burrito though, im going to try that next time.

  2. Why not with cilantro or onions or diced green chilies or any other non brown garnish? Or avocado? Could even add some yogurt as a creme. Just sayin, it looks kinda plain by the end when it could look and taste dazzling. But seriously, good looking high protien start to the day.
