Bought these beef back ribs on markdown, figured they were worth experimenting with. Went on the pellet grill at 250 for roughly two and a half hours unwrapped, spritzed with ACV/water halfway through, wrapped in foil with a few sprays of the ACV/water for roughly an hour-an hour and a half until probe tender. The meat itself was fantastic, I really just did not like the cut at all; way too much gristle and fat for my taste. I don’t want to throw them away, and I’m genuinely so unimpressed that I don’t want to give them away either. Do y’all have any suggestions on what you would do with them other than suffer through the remainder?

    Chop into little bits, throw into a frying pan with some spicy bbq sauce, then use that as meat for a quesadilla is my go to when I need to get rid of disappointing smokes.

    Rib bbq salad, some corn, fried onions, and whatever else.

    We do it with the good cooks it’s so good.

    YouTube “arnietex” and learn to make enchilada sauce and make enchiladas. It doesn’t even have to be a bad cook, I turn almost all of my leftovers into enchiladas or tacos

    Toss it in a crock pot on low with something to add moisture like a broth.

    I shred it, freeze it, then put a handful in my instant ramen with some frozen veggies and an egg to class it up a little

    Chalk it up to experience and dig in. Learn from it and think back to what you did wrong. You have good pull back but it may not be to your liking. No harm in that. Laugh about it and eat up.

    There’s always more charcoal.

    I don’t really have bad cooks, but we save some pulled pork, brisket, or ribs to add to the spicy Korean Ramen noodles. It is hot, spicy, smoky, and so damn good.

    My last bad rib cooked ended up going into a pulled pork make and cheese. It was delicious.

    Slice it up and sauce it up. Can still make decent sandwiches. Put some coleslaw on it too.

    My mom used to make a tomato sauce with rib meat for spaghetti.

    I’ve chopped up pork ribs and made it into sandwichs, just like pulled pork. If it works for pork, I can see why it wouldn’t work for beef ribs.

    Or make it into fried rice/chow mein.

    Tacos are a great use, but also tacos are meant to take a little bit of meat and make it go far

    My last rib cook was so overdone, the meat literally fell of the bones and coul’ve been gummed by a newborn. Chopped it up for sandwiches. Fucking delicious!

    Mix it into a pasta dish that goes well with beef

    Personally i usually end up making sandwiches with them. Just chop them down and make a good sando/melt

    I’ve done Asian style pulled pork tacos. Fry up some peppers in skillet, then add your meat and sweet n sour sauce. Top with slaw.
